Reno County food column pairs late-summer cucumbers and corn in a chilled recipe

Late-summer produce won’t last forever, but a new weekly food column from rural Reno County encourages Kansans to “eke everything out of the season” by using what’s left while it’s still fresh enough to enjoy.

In this edition of Lettuce Eat Local, the columnist shares a cucumber-and-corn approach built around complementary flavors: cool cucumber crunch, sweet corn, red onion, and avocado. She notes that cucumbers grown late can turn bitter and that corn can become starchy if it gets too mature, yet she still picks and refrigerates carefully to make a dish before the window closes.

The recipe uses butter to sauté onions until browned, then cooks corn and pepper for a few minutes. After cooling, the remaining ingredients are stirred in, salted and peppered to taste, and chilled fully before serving. For substitutions, the column suggests frozen sweet corn could work in a pinch, while frozen cucumbers would not.
